Ingredients

  • 1.5 cup organic red lentils
  • 1 tsp olive oil
  • 1 medium yellow onion, diced
  • 1 tsp sea salt
  • 1 cup celery, diced

  • 3 cloves garlic, minced
  • 3 cup yams, cubed (or 1 large)
  • ½ tsp cracked pepper
  • ½ tsp red chili flakes
  • 1 Tbsp minced rosemary
  • 1 Tbsp minced oregano
  • 4 bay leaves
  • 6 cup vegetable stock

  • ¼ cup crumbled feta cheese

Instructions

  2. Heat oil in a large soup pot over medium-high heat and saute onion with 1 tsp salt until translucent.
